Though not physically present, it's a deliberate element in The Magic Table where the guests and diners are the magicians for the evening. Each guest is given a special envelope containing all the components to perform each magical trick, guided along by Thommy Ten and Amélie van Tass projected right on your table. And you'll be amazed just how well they can read your mind in a series of mind boggling tricks throughout the evening despite their physical absence, To complement the sensory dining experience, Grand Hyatt Manila performs a culinary trick of its own with a sumptuous five-course feast with The Wizard's Essential Menu (P 8,500). On its own, it's an impressive menu in itself matching each of the intricate magical tricks of the evening. And consistent with the tone of the evening, the flashing lights introduces the first course for the evening starting with A Spell of the Forest, a beautifully plated first course with Forest and Porcini Mushroom Paté on hazelnut soil, fig, lemon, pistachio and Manuka Honey. The pronounced earthy notes come through......in a visually stunning plated execution followed by the contrasting flavorful hints from the other elements of the dish. The Enchanted Shell with succulent butter poached Hokkaido Scallops delicately draped in a crisp herb crust, sun-dried tomatoes and rich crustacean bisque brings a bold briny sweetness to the palate complemented by a vibrant tartness from the sun-dried tomatoes and deep flavorful notes from the thick seafood bisque. Each element of the dish perfectly complements the other for a well-balanced play on textures and flavors. The Alchemy of the Sea with the succulent briny sweetness of the indulgent Crabmeat and Codfish Brandade is highlighted by its fresh, pure and clean flavors......as another trick blows you away with the clairvoyant talents of Thommy Ten and Amélie van Tass. How did they know? You'll soon find out this is a recurring question throughout the evening at The Magic Table. The evening's main course is then served, The Order of Fire with Mulwarra Tenderloin Beef Wellington and savory bone marrow & Café de Paris butter jus with its intense and concentrated notes.
